Gruyere and Belgian Ale Gougeres
BE Gougeres with Gruyere

This is a version with beer from a very traditional French appetizer: Gougeres.

Very popular to go with the wine tasting, it is also great with beer!


120ml milk

100 g. unsalted butter

60 ml Belgian Blond Ale

105 g. flour

1 teaspoon baking powder

3 eggs

140 g. Gruyere cheese

1 bunch fresh thyme

1 teaspoon ground mustard

Black pepper

Cayenne pepper



1. In a saucepan over medium heat, combine the milk, butter, beer, salt, pepper, mustard and peppers and let heat until butter is completely melted.

2. Add the flour and baking powder. Stir quickly until the dough pulls away from sides of the pan. Reduce the heat and cook for two more minutes while stirring.

3. Let the dough cool for 5 minutes.

4. Add the first egg and stir vigorously until it is incorporated into the dough. Repeat for the other two eggs.

5. Mix the cheese and thyme. Leave approximately 20 grams of cheese separated.

6. In a baking sheets with parchment paper, spoon level tablespoons of dough.

7. Sprinkle over the top of the dough a little milk and sprinkle the cheese previously separated.

8. Bake in a preheated oven (400°F) for 10 minutes. Lower the temperature to 250°F and let another 10 minutes in the oven or until they are golden.

A good tip is that you can freeze them!

Follow the steps until the baking sheets and place in the freezer for an hour. Then you can remove them from the sheet and place in bag.

Then just bake normally!!!
