70g of butter in small cubes

250 g of chopped milk chocolate

80g of flour, sifted

45g of cocoa, sifted Salt

3 eggs

120g of white sugar

40g of brown sugar

1 teaspoon of vanilla extract

225ml of Guinnes (or any other Stout beer)

120g of dark chocolate chips


1. Preheat the oven at 180°C (360 F)

2. Butter and flour an 8-inch square pan

3. Melt the butter in a pan in medium heat. Remove from the heat, add the milk chocolate and let it rest for a minute. Mix until the chocolate melts completely and let it cool.

4. In a bowl mix the flour with the cocoa and a bit of salt.

5. In a mixer, beat very well the eggs and sugars. Add the vanilla extract. Then add the melted milk chocolate and mix.

6. Add the flour mix and at the end, add the beer. Mix all together by hand gently until it combines well.

7. Pour the mix into the square pan. Add the dark chocolate chips on the top and bake for around 50 minutes.

8. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out almost clean.

9. When its done, remove to a rack to cool. Resist the temptation to cut into it until its mostly cool.
